Healthy Mini Pumpkin Muffins

Looking for a healthy, pumpkin pleasing snack for the fall? This recipe is sure to tantalize your pumpkin-loving taste buds and also help you keep tabs on the calories you are taking in as the holiday seasons start to approach. You can enjoy this sweet snack at a mere 50 calories per bite. If you are looking to take them up a notch you can mix in some walnuts, pecans, or hazelnuts.

Ingredients

  • 1 tablespoon ground flaxseed
  • 3 tablespoons water
  • 1 and 2/3 cups Whole Wheat Pastry Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Cinnamon liquid herb (we recommend Herb Pharm’s, Cinnamon Liquid Herb)
  • 1 and ½ teaspoons Pumpkin Pie Spice
  • ½ teaspoon Sea Salt
  • 1 cup fresh Pumpkin Puree
  • ¾ cup Brown Sugar
  • 2 tablespoon Maple Syrup
  • ½ teaspoon Vanilla
  • 1 tablespoon Coconut Oil (we recommend Dr. Bronner’s Organic Coconut Oil)
  • ½ cup unsweetened Applesauce
  • 1 tablespoon Chia Seeds

Instructions

Preheat oven to 350 degrees and prepare mini muffin pan by wiping Coconut Oil to make sure the muffins don’t stick.

Whisk together ground flaxseed with water in a small bowl with a fork and let it sit for a few minutes to get to a gel-like consistency.

In a large bowl, combine the dry ingredients and combine the wet ingredients in a medium-sized mixing bowl and blend well.

Fold in the liquid mixture to the dry and stir well.

Pour batter into the mini muffin pan by using a tablespoon and place on the center of the oven. The batter should be enough to make 32 mini muffins.

Bake for 10-14 minutes depending on your oven’s heat gauge and be sure and check a muffin before pulling from the oven the tool should come out clean.

While cooling sprinkle a little bit of Chia Seeds on the top to give it the extra health benefits for a daily fall snack.

Ingredients You’ll Need

  • 2 tablespoons fresh pumpkin puree
  • 2 teaspoons raw honey
  • 1 egg (read benefits and select which part of the egg is best for you in this mask)
  • 3 drops of frankincense essential oil

Instructions

  • Beat 1 egg into the fresh pumpkin puree.
  • Mix in the two teaspoons of raw honey into the mixture.
  • Mix in the few drops of frankincense essential oil to this mask.
  • Finally, store the mask in the fridge or apply immediately on clean skin and leave on face for 15 to 20 minutes max. Rinse with lukewarm water and after the skin is cleansed rinse with ice cold water.

PUMPKIN AND WALNUT SCRUB

We know the benefits of pumpkin full of enzymes and vitamins to nourish your skin, but when pumpkin is mixed with walnut oil and yogurt you can scrub away dead skin cells to reveal fresh skin underneath.

Ingredients You’ll Need

  • 2 tablespoons pumpkin puree
  • 2 tablespoons natural sugar
  • 1 teaspoon raw honey
  • 1 teaspoon walnut oil
  • 1 tablespoon plain Greek yogurt
  • 1/8 teaspoon cinnamon powder

Instructions

  • Mix the pumpkin puree with the natural sugar.
  • Add raw honey and Greek yogurt to this mix.
  • Sprinkle in the cinnamon powder and mix all of the ingredients thoroughly.
  • Save this scrub in the fridge or apply this scrub to damp skin in a circular motion. After you’ve scrubbed leave it on the skin for 5 to 10 minutes to allow the oils to seep in.
  • Rinse off with cold water and pat dry.
